PEARSE LYONS WHISKY
Pearse Whiskey is a celebration of Irish heritage, innovation, and craftsmanship. Founded by Dr. Pearse Lyons, descended from five generations of Dublin coopers, this award-winning whiskey is distilled at the Pearse Lyons Distillery in the heart of Dublin. Set in the restored St. James’ Church, the distillery blends centuries of tradition with modern ingenuity.
Dr. Lyons, the first Irishman to earn a Master’s in Brewing & Distilling, built a legacy of excellence through decades of global experience, from helping design the Midleton Distillery to pioneering sustainable fermentation technologies in the U.S. His passion culminated in the creation of Pearse Whiskey: a range of rich, characterful spirits including Ireland’s first new 5-Year-Old Single Malt in over 25 years. Each bottle of Pearse Whiskey reflects a legacy of craftsmanship, a spirit of innovation, and a deep connection to Irish roots.
Pearse Irish Whisky 5 year old
The Original is a blended 5-Year-Old Irish Whiskey of malt and grain, aged in Town Branch Kentucky ex-Bourbon barrels from our sister distillery in Lexington.

Pearse Irish Whisky 7 year old
Distiller’s Choice is a blended 7-Year-Old Irish Whiskey of grain and malt whiskeys predominantly aged in ex-Bourbon barrels with a small amount of Sherry barrel aged whiskey in the mix. The Kentucky Bourbon barrels come from our sister distillery in Lexington. This Irish Whiskey contains our own single malt. 2020 and 2021 World Whiskies Awards Category Winner, Blended Irish Whiskeys 12 Years and Under.

Pearse Founders Choice 12yr Irish Whiskey is a Single Malt aged in former bourbon barrels from our sister distillery, Town Branch Distillery in Lexington Kentucky and aged a minimum of 12 years.

Ha’Penny Irish Gin and Whiskey
Ha’Penny Irish Gin and Whiskey brand is a tribute to the charm, character, and craft of old Dublin. Inspired by the iconic Ha’penny Bridge, which has connected people across the River Liffey since 1816, the brand celebrates the spirit of connection, community, and timeless tradition. Crafted at the Pearse Lyons Distillery in the heart of Dublin, Ha’Penny Gin and whiskeys are expertly blended and distilled using a mix of malted and unmalted barley, corn, and traditional botanicals—creating distinctive, approachable expressions with a contemporary twist. The range embodies the vibrancy of Dublin’s Liberties district, where history and innovation meet. Whether it’s the floral, spiced notes of the Ha’Penny Original or the smooth depth of its cask-finished editions, each bottle captures a piece of Dublin’s soul—crafted with care, meant to be shared.
Ha’penny Dublin Dry Gin
A small batch pot distilled gin featuring thirteen expertly selected botanicals offering a unique flavour and taste inspired by Dublin. Named after the iconic Ha’penny Bridge in Dublin, the Ha’penny range features geranium, dandelion, lavender and blackberry – all botanicals which would have been growing in the nearby Phoenix Park in Victorian times when the bridge was built.

Ha’penny Rhubarb Gin
A refreshing, distinctively pink small batch pot distilled gin featuring the finest rhubarb alongside thirteen expertly selected botanicals. Named after the iconic Ha’penny Bridge in Dublin, the Ha’penny range features geranium, dandelion, lavender and blackberry – all botanicals which would have been growing in the nearby Phoenix Park in Victorian times when the bridge was built. We differentiate our Rhubarb Gin through a natural distillation approach, avoiding any artificial colouring and flavouring. We take our standard Ha’penny Gin off the stills and bring it back to a full-strength bottling ABV of 40% with the juice from freshly pressed rhubarb.

Ha’penny Four Cask Irish Whiskey
Ha’Penny Four Cask Irish Whiskey is created using four different cask types and two styles of whiskey. The Whiskey is a combination Port Pipe Malt, Bourbon Barrel Malt, Sherry Butt Grain & Double Charred Barrel Grain. This combination gives a deliciously versatile rich and spicy whiskey. Non-Chill filtered and present at natural colour, this whiskey will appeal to a wide variety of palates.

Ha’penny Original Irish Whiskey
Ha’Penny Original Whiskey is a very interesting and complex blend of Malt and Grain Irish Whiskeys. The Malt is a mixture of Sherry bodega and Bourbon cask matured malt. The Grain is a rare make up for an Irish Whiskey, it is a mixture of both corn and wheat grain Irish whiskey both matured in first fill bourbon casks.

MIL
MiL Mediterranean Style Gin
Míl is an Irish pot still gin, distilled with fragrant Mediterranean botanicals and bursting with southern sunshine. This small-batch gin is distilled with almond, basil, bergamot orange, gooseberry, juniper, olives, orris, rosemary and thyme Inspired by the warm golden light from the stain glass window in our former church of St. James, which depicts the Camino de Santiago in North-West Spain, where St. James is buried, this is an Iberian-Irish fusion gin. Míl was the mythical Spanish warrior whose descendants populated our land. The sons of Míl were said to have brought the warm flavours of the Mediterranean sun to Ireland.
